MANUFACTURING PROCESS
Trimming includes beef rib muscles, knuckles, the front end of the small ribs and trimmings of roasts and loins. Lymph glands, bones, tendons, and bruises has to remove. Raw material of fatness grade 1-2 top ribs are as such after sorting, Fatness grade 3-4 of fat is removed from top ribs so that the fat content of 20 is not exceeded. Trimming does coarse grinding.
